Ingredients

Scale
  • 2.5 tbsp Chinese cooking wine
  • 1.5 tbsp oyster sauce
  • 4 tbsp light soy sauce
  • 0.75 tsp sesame oil
  • 0.25 tsp white pepper
  • 0.25 tsp ground ginger
  • 2 tbsp oil
  • 2 eggs
  • 180g chicken breast
  • 2 garlic cloves
  • 0.5 onion
  • 120g bacon
  • 1 small carrot
  • 0.5 cup corn
  • 0.5 cup peas
  • 2 cups cooked white rice
  • 0.75 cup green onions

Instructions

  1. Combine sauce ingredients.
  2. Prep ingredients: mince garlic, dice onion and carrot, slice green onions, cut chicken and bacon.
  3. Scramble eggs, set aside.
  4. Cook bacon, garlic, and onion.
  5. Add chicken, cook.
  6. Add carrot, corn, and peas.
  7. Add rice and sauce, stir.
  8. Add eggs and white parts of green onions.
  9. Serve with green onions.

Notes

  • Day-old, chilled rice is best.
  • Do not overcook the vegetables.
  • Keep whites and greens of green onions separate.
