- 4 boneless, skinless chicken breasts
- 3 tablespoon olive oil, divided
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried Italian herbs
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 large russet potatoes, peeled and cut into 2–3 inch chunks
- 4 tablespoon butter
- 1/2 cup whole milk, warmed
- 2 ounce cream cheese
- 1 pound carrots, peeled and sliced
- 1 tablespoon olive oil
- 2 tablespoon butter
- 1 tablespoon honey
- 1 clove garlic, grated
- 1 shallot, minced
- 2 cloves garlic, minced
- 1/2 cup dry white wine
- 1/2 cup chicken stock
- 2 tablespoon cold butter
Instructions
- Boil potatoes until fork-tender.
- Roast carrots with olive oil, salt, and pepper.
- Make honey-butter glaze and coat carrots.
- Season chicken breasts.
- Sear chicken in a skillet.
- Sauté shallot and garlic in the same skillet.
- Deglaze pan with white wine and add chicken stock.
- Whisk in cold butter for sauce.
- Mash potatoes and combine with butter, cream cheese, and milk.
- Season mashed potatoes.
Notes
- Don’t overmix mashed potatoes.
- Use a potato ricer or masher for smooth texture.
- Prepare glazed carrots in advance.
