Description

Ingredients

  • 4 boneless, skinless chicken breasts
  • 3 tablespoon olive oil, divided
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried Italian herbs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 large russet potatoes, peeled and cut into 23 inch chunks
  • 4 tablespoon butter
  • 1/2 cup whole milk, warmed
  • 2 ounce cream cheese
  • 1 pound carrots, peeled and sliced
  • 1 tablespoon olive oil
  • 2 tablespoon butter
  • 1 tablespoon honey
  • 1 clove garlic, grated
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1/2 cup chicken stock
  • 2 tablespoon cold butter

Instructions

  1. Boil potatoes until fork-tender.
  2. Roast carrots with olive oil, salt, and pepper.
  3. Make honey-butter glaze and coat carrots.
  4. Season chicken breasts.
  5. Sear chicken in a skillet.
  6. Sauté shallot and garlic in the same skillet.
  7. Deglaze pan with white wine and add chicken stock.
  8. Whisk in cold butter for sauce.
  9. Mash potatoes and combine with butter, cream cheese, and milk.
  10. Season mashed potatoes.

Notes

  • Don’t overmix mashed potatoes.
  • Use a potato ricer or masher for smooth texture.
  • Prepare glazed carrots in advance.
