A refreshing and protein-packed pasta salad.
Ingredients

- 8 oz rotini
- 1 red bell pepper
- 1 cucumber
- 1 1/2 cups broccoli
- 1 cup tomatoes
- 1/4 cup red onion
- 1/4 cup parsley
- 1/4 cup basil
- 1 1/2 oz feta
- 2 1/4 oz black olives
- 1/4 cup olive oil
- 4 tbsp red wine vinegar
- 1.5 tbsp dijon mustard
- 2 garlic cloves
- salt
- pepper
- 1/2 tsp lemon juice
Instructions
- Prepare vegetables and herbs.
- Cook pasta al dente.
- Whisk vinaigrette ingredients.
- Combine pasta, vegetables, herbs, olives, and feta.
- Pour vinaigrette over salad.
- Season and chill before serving.
