Ingredients

Scale
  • 8 oz rotini
  • 1 red bell pepper
  • 1 cucumber
  • 1 1/2 cups broccoli
  • 1 cup tomatoes
  • 1/4 cup red onion
  • 1/4 cup parsley
  • 1/4 cup basil
  • 1 1/2 oz feta
  • 2 1/4 oz black olives
  • 1/4 cup olive oil
  • 4 tbsp red wine vinegar
  • 1.5 tbsp dijon mustard
  • 2 garlic cloves
  • salt
  • pepper
  • 1/2 tsp lemon juice

Instructions

  1. Prepare vegetables and herbs.
  2. Cook pasta al dente.
  3. Whisk vinaigrette ingredients.
  4. Combine pasta, vegetables, herbs, olives, and feta.
  5. Pour vinaigrette over salad.
  6. Season and chill before serving.
